If you ever need a pick me up (and I sure did), than you can’t go wrong with a pie. I understand that other people may enjoy pumpkin or pecan pie as their pastrie of choice, but they’re wrong and they know it. Nothing compares to a nice, warm, apple pie. And Patricia Conte with sheknows has the perfect recipe I’ve ever seen for filling that craving.
Start by cutting 1/4th of an apple out, and then using a paring knife to hollow out the rest of it. Then, fill the hole with the apple chucks, cinnamon, brown sugar, nutmeg, and walnuts. Cover the hole with a strip from a prepared pie crust, and keep doing that until you’ve made a little pie. Bake it for an hour at 375 degrees, and voila… mini apple pies, that taste perfect at the end of December.
Face it, these sound like a better snack than everything you’ve had in the last two weeks. Try it out at home, and see how impressed everyone is.
